Hot Smoked Salmon and Zoodles

Ingredients

  • 1 piece hot smoked salmon
  • 1/2 ripe avocado
  • 1/4 cup florets of broccoli
  • 1/2 zucchini
  • 1 lime
  • 1/2 cup coriander
  • 2 tbs extra virgin olive oil
  • 1 tbs almonds
  • 1/2 clove garlic
  • 1/4 tsp black pepper
  • 1/2 dried chilli
  • Sprinkle of chopped peanuts

Instructions

  • To make the coriander and lime dressing blend the lime, coriander, extra virgin olive oil, almonds, garlic and black pepper. Place to the side.
  • Spiralize the zucchini to make the zucchini noodles ("zoodles"). Place the dressing over the zoodles.
  • Steam the broccoli and slice the avo.
  • Add the salmon to the bowl, and sprinkle with peanuts and dried chilli.

Notes

You will need a spiralizer.
