Fruit Mince Pies

  • 225g plain flour
  • 75g self raising flour
  • 55g Icing sugar and extra for dusting
  • 1 egg yolk
  • 1 jar (285g) fruit mince
  • 2 1/2 tbs iced water
  • 150g unsalted diced butter


  • Preheat oven to 210 (DC) and lightly grease a tart tin.
  • To create the pastry, blend the icing sugar, butter and flours in a food processor, until well combined.
  • Add the iced water and egg yolk. Pulse until mixture begins to come together.
  • Shape the pastry into a disk, wrap in plastic film and refrigerate for 1 hour.
  • Roll out the pastry to 3mm thick on a lightly floured work bench. Cut round discs of pastry and gently press to line the tart tins. Cut stars for the pastry “lids” and set aside.
  • Spoon the fruit mince into each tart base and place the pastry star on top.
  • Place the tart tin onto a baking tray and place into oven. Bake for 12 minutes and then allow pastries to cool.
  • Dust with icing sugar and serve.
