Orange Syrup Cake

Orange & Almond Syrup Cake

Moist, sweet and buttery orange cake, perfect for any occasion!


    For the Cake:
  • Oil spray, to grease tin
  • 75g butter
  • 75g applesauce
  • 3/4 cup caster sugar
  • 2 eggs
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 cup almond meal
  • 4 teaspoons finely grated orange rind
  • 1 tsp ground nutmeg
  • 1/3 cup milk
    For the Syrup:
  • 2 oranges
  • 1/2 cup caster sugar
  • 4 whole cloves


    For the Cake:
  • Preheat oven to 180 degrees. Grease 20cm round cake tin with melted butter.
  • Using an electric beater, beat butter, applesauce and sugar in a large bowl until pale and creamy. Add the eggs, 1 at a time, beating well. Use a large metal spoon to gently fold in the almond flour, baking powder, almond meal, orange rind, nutmeg and milk until combined. Spoon cake batter into the prepared tin and smooth the surface.
  • Bake in preheated oven for 3 minutes or until skewer inserted into the centre comes out clean.
  • Remove from oven and allow to rest for 2 minutes before turning onto a wire cooling rack.
    For the syrup:
  • Use a vegetable peeler to remove the skin from 1 orange. Use a small sharp knife to cut rind into very thin strips. Juice oranges. Combine orange juice, rind, sugar and cloves in a saucepan over low heat and cook, stirring, for 3 minutes or until sugar dissolves. Increase heat to medium-high and bring to the boil. Boil for 5 minutes or until mixture is syrupy. Remove cloves and discard.
  • Spoon the hot syrup and orange rind over the warm cake. Set aside for half an hour to cool before serving.
